What's the Difference Between Roasts?
The degree to which coffee beans are roasted is one of the most important factors determining the taste of the coffee. Before roasting, green coffee beans have a grassy smell and little or no taste. The roasting process transforms them into the crunchy, aromatic beans that we recognize as coffee. The age, processing method, grind, and brewing method also affect the taste, but the roast level provides a rough guide to the taste you can expect. Light roasts have pronounced acidity and a toasted grain taste, medium roasts exhibit more balanced flavor, aroma and acidity, and dark roasts will generally have a smoky taste.
